From The Page (February, 2018):
Do you like to eat? I have it on good authority that people in the Middle Ages did too!
Whether you are a fresh new cook, or a well seasoned chef we have classes for you. Come, share, learn and eat! This is a great opportunity that only comes to the West once every three years.
Teachers need students as much as cooks need eaters. Please consider attending and taking classes — or just hang out, it’s a lovely site. The event costs include the Girl Scout cabins with electricity, showers, and meals for the weekend. This means there is no set up or break down of encampments, great food, and nice hot showers! Come and learn about — and eat — yummy period foods.
The meal plan for this year’s Symposium will use recipes from the 13th century Syrian cookbook, Scents and Flavors, cooked by the fabulous Masters of the Culinary Arts, Anna de Serra and Francisco Hinojosa for both breakfast Saturday and Sunday, and Saturday lunch and dinner.
